What is the Modena balsamic vinegar?
Modena in northern Italy, a magical land where people inherited the oldest traditional production process, brewed the grape juice into the enduring Modena balsamic vinegar. They squeeze the juice after picking grapes in the day, and put the juice on the outdoor open fire brewed to full evaporation after collecting, the brewed temperature must be controlled between 90-95 degrees Celsius. After evaporation, filtered the residue, put it into casks which last for 3-4 generations. After 5-6 years’ fermentation and acidification, the high quality balsamic vinegar with perfect unity of aroma, flavor and color we can see now turns out. |
